Mini Halloween Cheesecakes

As you may know, I am an absolute Halloween FANATIC! I want to turn every dessert orange and black and decorate every cupcake with candy corn and fake blood. (Wow that’s gross Lindsey!)

So when I discovered the recipe for mini Oreo cheesecakes quite some time ago, you know my Halloween obsessed mind automatically went to orange food coloring, Halloween Oreos, candy corn, pumpkins and vampires (don’t know what’s up with the vampires?). Since it’s almost time for Halloween (!!!), I don’t feel like a complete lunatic having orange food coloring all over my hands and arms. Well maybe I do feel a bit looney since it’s looks like I’ve been fingering painting.

Now let’s get bakin’ some pure love Halloween style!

First line a cupcake/muffin baking pan with cupcake liners. Place a Halloween Oreo in the bottom of each cupcake liner. Oh aren’t these Halloween Oreos with pumpkins and ghosts on them so cute?!  I swear they taste a million times better too. You don’t even want to know how many of these tasty Halloween Oreos went into my mouth and not in the baking pan.

Now place 6 Halloween Oreos in a food processor and crush ‘em up like so. Or if you don’t have a food processor, put ‘em in a bag and crush them up. Set them aside.

 

In a large mixing bowl with the paddle attachment (or a handheld mixer works fine) cream the 1 pound of softened cream cheese on medium speed until smooth. Now don’t get all healthy on me and use 1/3 less fat cream cheese or fat free cream cheese. Use full fat, we’re making desserts not vegetables!

Add 1/2 cup of sugar to the cream cheese and mix until combined. Now add in 1/2 teaspoon of tasty vanilla extract. Sorry I only have a picture of “add in vanilla extract.”

Slowly add in the lightly beaten eggs. Once the eggs are incorporated into the batter, add in 1/2 cup of sour cream (full fat!!! Mmmm). Use you imagination and pretend I’m adding in sour cream and beaten eggs.

Now comes the part that I get WAY too excited about. Add in some orange gel food coloring. Stir it up in order to make all of the batter ORANGE!! Feels like Halloween already don’t ya think?

Throw in the crushed Oreos and stir it up! YUM!!! The batter is quite delicious by the way. :)

Pour the batter into each cupcake liner, filling each one almost to the top. Mmmm I can’t wait and I know you can’t either! Well just hang on there.

Bake at 275 degrees and rotate the baking pan halfway through the baking time.

Once they’re done, let the mini cheesecakes cool on the cooling rack in the baking pan.

Now comes the hard part, place the cheesecakes in the refrigerator and let them sit for at least 4 hours or preferably overnight. I typically refrigerate them overnight. But I admit that I do eat one right away, ok maybe like two. But who’s going to know right? Enjoy! :)

Mini Halloween Cheesecakes
(adapted from Martha Stewart)

21 Halloween Oreo cookies, 15 left whole, 6 crushed
16 ounces (1 pound) cream cheese, softened – That’s two blocks of cream cheese
1/2 cup sugar
1/2 cup sour cream
2 large eggs, room temperature and lightly beaten
1/2 teaspoon vanilla extract
orange gel food coloring

Preheat oven to 275 degrees F. Line a cupcake/muffin baking pan with cupcake liners.

Place 6 whole Oreo cookies in a food processor and grind them up. If you don’t have a food processor, put them in a plastic bag and crush them. Set aside.

Put 1 Halloween Oreo in each cupcake liner.

In a bowl of a stand mixer with the paddle attachment (a handheld mixer works fine) on medium speed, mix the cream cheese until smooth.
Add in the sugar and mix until combined. Then add in the vanilla extract.
Slowly add in the lightly beaten eggs and continue mixing. Now add in the sour cream and mix to combine the ingredients but don’t over mix.

Once the ingredients are combined, use a spatula to ensure that all the ingredients are combined.
Add in a small amount of orange gel food coloring and stir with a spatula in order to color the entire cheesecake batter.

Throw in the Oreo crumbs and stir to combine.

Using an ice cream scooper, fill each cupcake liner with the cheesecake batter, almost to the top.

Bake at 275 degrees F for 22 minutes. Halfway through the baking time, rotate the pan.
Once the cheesecakes are done baking, chill them in the refrigerator overnight. (keep them in the cupcake pan)

    I made these between yesterday/today (since I bake every Thursday evening and wanted to do something festive). They were outstanding! (And I don’t even like cream cheese!) I loved them, my friends loved them… :) Even used Halloween-themed cupcake liners.

    We had some leftover “batter,” but my friends fought over it and ate it all. Would definitely make these again!
