If there’s one flavor combination I could eat for the rest of my life it would definitely be peanut butter and chocolate. There’s nothing else that makes me weak in the knees and makes me drool uncontrollably (wow that’s attractive!) than the taste of creamy peanut butter and rich smooth chocolate. And you know what? I know most of you would agree.
Then put peanut butter and chocolate in a dessert and oh my word I could just devour the dessert in 5 seconds.
So when I started making some blondies, you know I just couldn’t make them plain or even just with chocolate chips. That would just be wrong in my decadent dessert filled world and making a simple dessert would make you all think something is seriously wrong with me. Maybe you’d think I was sick or hit my head. Then I spotted some peanut butter cups and in my opinion, peanut butter cups aren’t just for eating. They belong in desserts. So I chopped them up and threw them into the already rich blondie batter.
First sift together 1 cup of flour, 1/8 teaspoon of baking soda, and 1/2 teaspoon of baking powder, and 1/4 teaspoon of kosher salt. Set aside. Pretend I’m showing you a picture of sifted ingredients.
In a large mixing bowl with the paddle attachment, mix together 1/3 cup of melted unsalted butter, 1 cup of packed light brown sugar and 1 Tablespoon of vanilla extract. Mmmm butter.
Now add in 1 large egg. Mix it so that the egg is fully incorporated.
Slowly and I mean SLOWLY, add in the dry ingredients. Mix the batter until it’s almost combined. Make sure you don’t overmix the batter or you’ll end of with hockey pucks instead of blondies. Now take a spatula/mixing spoon and fold the ingredients together.
Here comes the most delicious part, take 6 regular size peanut butter cups and chop each one into 4 pieces.
Throw them into the blondie batter and fold them in. Oh my word don’t you just want to dunk your head in there. Well at least I do.
Spread the batter into a lightly greased 8 by 8 baking pan like I did here.
Bake the blondies at 350 degrees for a total of 25 minutes.
While the blondies are baking. take 3 regular sized peanut butter cups and chop each one into 4 pieces.
During the last 5 minutes of baking, press the chopped peanut butter cups into the blondies and continue baking. The blondies will bake for a total of 25 minutes.
Once the blondies are done baking, cool them completely on a cooling rach and then cut in squares! Enjoy!
Peanut Butter Cup Blondies
1 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1/8 teaspoon baking soda
1 cup packed light brown sugar
1/3 cup unsalted butter, melted
1 Tablespoon vanilla extract
1 large egg, at room temperature
9 regular size Peanut Butter Cups (chop each peanut butter cup into 4 pieces) (6 will be mixed into batter and 3 will be pressed into the top of the blondies)
Preheat oven to 350 degrees F. Lightly grease an 8 by 8 inch baking pan.

In the bowl of a stand mixer with the paddle attachment (a handheld mixer works fine) mix together the light brown sugar, melted unsalted butter and vanilla extract.
Add in 1 large egg and mix to combine.
Slowly add in the dry ingredients and mix until the ingredients are almost combined. Take a spatula and fold the ingredients together.
Chop up 6 regular size peanut butter cups into 4 pieces each. Throw the chopped peanut butter cups into the blondie batter and fold them in.
Spread the batter evenly in the lightly greased baking pan.
Bake for a total of 25 minutes at 350 degrees F. While the blondies are baking, chop up 3 more regular size peanut butter cups into 4 pieces each. During the last 5 minutes of baking, press the chopped up peanut butter cups into the blondies.
Then continue baking the blondies for 5 more minutes, the baking time will total 25 minutes.
Once the blondies are done baking, cool completely on a cooling rack and then cut into squares. Enjoy!

Lindsey–this recipe is seriously the answer to my baking prayers! We have a bowl full of Reese’s Cups left over from Halloween and (miraculously!) I’ve had the self-control to not eat any yet, as I was waiting for an opportunity to bake them into a dessert. These look AMAZING, and they will be baked in my kitchen this weekend

Peanut Butter cups are one of three of my candy-bar favs. I don’t know if I could get through unwrapping those pb cups to complete the recipe before finding them in my mouth. Delicious decadence!
