Funfetti Cake Batter Pie

 

 

 

I have a deep love for batters and dough (well not bread dough, that would be kind of weird). Brownie batter, cake batter, cookie dough, cake batter, coffee cake batter and the list goes on. The best part of baking is eating the batter licking the spoon with the cake batter or eating the cookie dough.  But nothing compares to the pure deliciouness of Funfetti cake batter. I don’t know what makes it so much more special and insanely addictive. Perhaps it’s the specks of colors throughout the batter, the word “Funfetti” or the Pillsbury dough boy on the front of the box. All I know is that I love my batter and dough flavored desserts. I could bathe in chocolate chip cookie dough ice cream, cake batter ice cream, brownie batter ice cream and this Funfetti Cake Batter Pie. Oooh yes!

First began working on the pie crust. Take some Golden Oreos. If you can’t find Golden Oreos, you can use graham crackers.

In a food processor, grind up 1/2 the package of Golden Oreos. If you’re using graham crackers, use 2 cups of graham cracker crumbs.

Put the crumbs into a large mixing bowl. (it should  measure out to be 2 cups) Add in 1 Tablespoon of sugar and mix it up!

Pour 1/4 cup of melted unsalted buter over the cookie crumbs and mix!

Put the cookie crumb mixture into a 9 inch pie plate.

Press the crumbs into the sides of the pie plate. Then into the bottom.

Bake the crust at 350 degrees for 8 minutes. Once it’s done baking, place the pie plate onto a cooling rack and cool completely before filling with the Funfetti Cake Batter Pudding.

Pour 3 cups of whole milk in a large saucepan. Heat the milk over medium low heat until it almost comes to a simmer. Watch the saucepan while you work on the next step. I don’t want milk overflowing!

In a large mixing bowl with the paddle attachment (a handheld mixer works too), add in 4 large egg yolks at room temperature, 1/4 cup of cornstarch, 1/3 cup of sugar and 3/4 teaspoon of kosher salt.

Mix on medium speed for 4 minutes until the egg yolk mixture is thick.

Turn on mixer on low speed and very carefully add the milk to the mixing bowl. I use a measuring cup to pour the milk into the mixing bowl so the milk doesn’t end up everywhere! Continue mixing until the milk is combined with the rest of the ingredients.

Then carefully pour the mixture back into the large saucepan and put it back on the stovetop. Heat the mixture over medium low heat until it thickens and whisk constantly. This should take about 7-10 minutes. If it’s taking forever to thicken, increase the heat to medium but watch it carefully and whisk!

Once it’s thickened, add in 1 1/2 Tablespoons of diced softened unsalted butter.

Add in 1 1/2 teaspoons of vanilla extract.

Put a sieve over a large bowl and push the pudding through the sieve. This will help eliminate any lumps in your pudding. Because I don’t know about you but lumpy pudding just isn’t my thing. ;)

Whisk in 6 Tablespoons of Funfetti Cake Mix. Make sure you whisk it really well. Yes I realize I have a measuring cup in my hand, I put my 6 Tablespoons in the measuring cup. :)

 

Pour the pudding into the pie crust. Spread it evenly with a spatula. Cover the pie with plastic wrap and chill for about 6 hours.

Once the pie is done chilling, you can top the Funfetti Cake Batter Pie with whipped cream and rainbow sprinkles! Cut into slices and enjoy. (of course the first slice is always the hardest to cut and another reason to cut yourself two slices ;) )

 

Funfetti Cake Batter Pie

Crust
1/2 package Golden Oreos or 2 cups graham cracker crumbs (about 11 graham cracker sheets)
1 Tablespoon sugar
1/4 cup unsalted butter, melted

Pudding
3 cups whole milk
4 egg yolks, at room temperature
1/4 cup cornstarch
1/3 cup sugar
3/4 teaspoon kosher salt
1 1/2 Tablespoons unsalted butter, diced and at room temperature
1 1/2 teaspoons vanilla extract
6 Tablespoons Funfetti Cake Mix

Whipped Cream
1/2 cup heavy whipping cream
1 Tablespoon sugar

Rainbow Sprinkles

To make the crust:
In a large food processor, grind up the Golden Oreos into fine crumbs. You should have 2 cups of cookie crumbs. Put the crumbs in a large mixing bowl and add the sugar. Mix the ingredients together. Then add the melted butter and mix to coat all of the crumbs with butter.

Put the crumb mixture into a 9 inch pie plate. Press the crumbs into the sides of the pie plate and into the bottom. Bake at 350 degrees for 8 minutes.
Cool the crust completely on a cooling rack before filling with the pudding.

To make the Funfetti Cake Batter Pudding:
Pour the milk into a large saucepan. Heat the milk over medium heat until almost simmering. Make sure you watch the milk so it doesn’t overflow while you work on the next step.

In a large mixing bowl with the paddle attachment (a handheld mixer works too), mix together the egg yolks, cornstarch, sugar and kosher salt for 4 minutes on medium speed. The egg mixture should be thick.

On low speed, carefully pour the milk into the mixing bowl. I use a measuring cup to pour the milk in.
Continue to mix until the milk is combined with the other ingredients.

Pour the mixture back into the large saucepan and heat over medium low heat and constantly whisk the mixture. The pudding should take 7-10 minutes to thicken.

Once the pudding has thicken, remove the saucepan from the heat. Add in the unsalted butter and vanilla extract. Whisk.
Put a sieve over a large bowl. Pour the pudding mixture into the sieve and using a spoon or spatula, press the pudding through the sieve. This will help eliminate any lumps in the pudding.

Then whisk in the cake batter mix. Make sure you whisk the ingredients really well. You don’t want lumps of cake batter mix in your pudding.

Pour the pudding into the cooled pie crust. Evenly spread it out with a spatula.

Cover the pie with plastic wrap. Be sure to press the plastic wrap against the pudding. This is important so a film doesn’t form on the pudding.
Chill the pie in the refrigerator for 6 hours.

To make the whipped cream:
Pour the heavy whipping cream in a large mixing bowl with the whisk attachment. (a handheld mixer works fine) Turn the mixture on high speed and while it’s mixing, slowly add in the sugar. Mix until stiff peaks form.

Once the pie is done chilling, top the pie with the whipped cream and rainbow sprinkles.

      No you do not bake the pie, the filling is pudding.
      The eggs are not raw. The filling (with the egg yolks) is cooked over the stove for 7-10 minutes.
