If there’s one dessert I can’t be trusted around it’s brownies. There’s something so addictive about this ooegy gooey chocolately treat especially if chopped up peanut butter oreos are thrown into the batter. But I have a quirky habit when it comes to brownies. Instead of wanting to eat the whole pan, I want to eat all the little crumbs that fall off of the brownies. The small pieces of brownie that are left over when you cut them into pieces. Or the little bit of Peanut Butter Oreos crumbs that are left behind when chopping them up. Then of course who can resist the extra brownie batter just sitting in the bowl, staring at you. It’s one of the many loves of my life. And don’t even get me started on the peanut butter frosting left in the bowl, on the paddle attachment, the spoon and who knows where else.
Sift together 3/4 cup all purpose flour, 1/2 cup unsweetened cocoa powder and 1/4 teaspoon of kosher salt. Set aside.
In a bowl of a stand mixer with the paddle attachment, mix together 1/2 cup melted unsalted butter (oooh butter!), 3/4 cup sugar, 3/4 cup packed light brown sugar and 1 Tablespoon vanilla extract. After it’s mixed up, add in 2 large eggs.
Slowly add in the dry ingredients until just combined. Then take a spatula (preferably a colorful one, kidding!) and fold the ingredients together. You have no idea how badly I just want to eat all of that batter right now.
Take 10 Peanut Butter Oreos and chop each Oreo into four pieces. Now it won’t be all perfect. That doesn’t matter.
Throw them into the batter. Eat a Peanut Butter Oreo.
Fold them in!
Spread the batter into a lightly greased 8 by 8 baking pan. Bake at 350 degrees for 30 minutes.
Cool the brownies completely before frosting. While the brownies are cooling, make the peanut butter frosting. This frosting is so insanely delicious. I could eat it with a giant serving spoon. Sift 1/2 cup of powdered sugar. Set aside.
In a bowl of a stand mixer with the paddle attachment, mix together 4 Tablespoons softened unsalted butter and 1/2 cup of creamy peanut butter. (not the natual kind)
Once it’s all mixed up, add in 1/2 teaspoon of vanilla extract. Mix mix!
Slowly and I mean slowly add in the powdered sugar.
Then add in 3 Tablespoons of heavy whipping cream. Mix it up until smooth.
Spread the frosting all over the cooled brownies. Crumble some more Peanut Butter Oreos on top of the frosting. Enjoy!
Peanut Butter Oreo Brownies
3/4 cup all purpose flour

1/2 cup creamy peanut butter (not the natural kind)
1/2 teaspoon vanilla extract
3 Tablespoons heavy whipping cream
Crushed Peanut Butter Oreos for topping (however many you like)
Sift the flour, unsweetened cocoa powder and kosher salt. Set aside.
In a bowl of a stand mixer with the paddle attachment, mix together the melted butter, sugar, packed light brown sugar and vanilla extract. Once combined, add in the eggs and mix.
Slowly add in the dry ingredients and mix until almost combined. Take a spatula and fold the ingredients together.
Chop each Peanut Butter Oreos into four pieces. Throw the Oreos into the brownie batter and fold them in.
Lightly grease an 8 by 8 baking pan and spread the brownie batter into the pan.
Bake at 350 degrees for 30 minutes. Cool the brownies completely before frosting.
Sift the powdered sugar and set aside.
In a bowl of a stand mixer with the paddle attachment, mix together the butter and peanut butter. Then add in the vanilla extract and mix.
Slowly add in the powdered sugar and mix until the powdered sugar is combined with the other ingredients.
Add in the heavy whipping cream and mix until the frosting is smooth.
Once the brownies are cool, frost them with the peanut butter frosting.
Sprinkle the crushed Peanut Butter Oreos on top of the frosting.
Enjoy!

Hi Annelise. No they don’t need to be refrigerated. I would put the frosting in a separate container if you ship them. I’ve shipped lots of my desserts before (such as brownies) and I always put my frosting in a separate container. (like a mason jar) I would also wrap each brownie in plastic wrap and then put them in an airtight container. That way they’ll stay fresh when you ship them.

That’s the only kind I buy (I seriously have 3 jars of it–crazy, I know), so I wanted to find out why I’d need to use another kind.
